Jumbo shrimp. Airline food. Boneless ribs. Fuzzy logic. Some words just dont seem to belong together. Im betting youd say healthy brownie falls into that category. Au contraire! How do I know that isnt the case? Because there was a lot of yumming in my kitchen as a gaggle of brownie aficionados devoured these. Refined white sugar out; Grade B maple syrup in. See ya white flour; hello almond flour and brown rice flour. Fare-thee-well butter; come-on-down olive oil! Add dark chocolate, walnuts, and cinnamon, and the result is a decadent culinary oxymoron for the ages.

Makes 16 brownies

Prep Time: 20 minutes

Cook Time: 30 minutes

You can also use a 9 by 6-inch baking pan. If you do, the baking time will be only about 25 minutes.

Cacao content is the amount of pure cacao products (chocolate liquor, cocoa butter, and cocoa powder) used in the chocolate; the higher the percentage, the more antioxidants the chocolate contains. And if youre into addition by subtraction, higher cacao percentages mean lower sugar content.

Preheat the oven to 350F. Line an 8-inch square baking pan (see note) with two pieces of foil long enough to overlap on all four sides. Lightly oil the foil.

Put the almond flour, brown rice flour, cocoa powder, cinnamon, baking soda, and salt in a bowl and stir with a whisk to combine.

Put half of the chocolate in a heatproof bowl and set the bowl over a saucepan of simmering water. Heat, stirring often, just until the chocolate is melted and smooth. Remove from the heat and whisk in the olive oil.

Crack the eggs into a large bowl and whisk until frothy. Slowly add the maple syrup and maple sugar, whisking all the while, and continue whisking until the mixture is smooth. Add the vanilla extract, then gradually add the chocolate, whisking vigorously all the while, and continue whisking until smooth and glossy.

Add the flour mixture and beat for about 1 minute. Stir in the remaining chocolate and the walnuts. Scrape the mixture into the prepared pan and smooth the top with a spatula.

Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Let cool to room temperature in the pan, then cover and refrigerate for at least 1 hour before cutting into 16 brownies.

Variation: For brownies that are more fudgy, replace the rice flour with another 1/3 cup of almond flour.

You can learn a lot sitting on the tailgate of a pickup truck. Thats where my buddy Chris, from Zuckermans Farm, used to sit me down and teach me about all things asparagus. Chris worked hard--awfully hard--as a farmer. He was true salt of the earth, and as generous as they come. Normally, theres an invisible line: farmers behind their wares and buyers on the other side, but Chris always insisted I step into his parlor. Both of us were always so excited when the first asparagus of the season showed up. Hed put aside a bunch for me, and then wed both hop up on that tailgate and talkabout recipes, how amazingly nutritious asparagus is, and, a lot of the time, about life and family.

Chris passed away not long ago, and I felt the best way I could honor him was to create a recipe featuring his favorite veggie. I think he would have enjoyed this, and I hope you will too.

Makes 4 servings

Prep Time: 15 minutes

Cook Time: 10 minutes

Peeling the asparagus gets rid of the stringy, sometimes tough outer layer and exposes the sweet flesh underneath. To peel it, use a regular vegetable peeler with a light touch to shave off just the skin. This technique is not necessary with thin asparagus spears.

Preheat the oven to 400F.

Put the hazelnuts on a rimmed baking sheet. Put them in the oven for 5 to 7 minutes as it preheats, until aromatic and browned. Transfer to a plate or, if youd like to remove the skins for a more refined texture and appearance, wrap them in a towel and give them a good rub. The majority of the skins will come right off. Coarsely chop the hazelnuts.

Put the asparagus on the same baking sheet in a single layer. Drizzle with the 2 teaspoons of olive oil and generously sprinkle with salt. Toss gently to evenly coat the asparagus. Bake for 8 minutes, until just barely tender.

Put the lemon juice, the 2 tablespoons of olive oil, 1/4 teaspoon of salt, and a few grinds of pepper in a small bowl and mix well with a small whisk.

ut the arugula in a large bowl. Drizzle with half of the dressing and toss until evenly coated. Mound the arugula on individual plates or a platter and arrange the asparagus on top. Drizzle with the remaining dressing and sprinkle the hazelnuts on top.

Variation: Substitute toasted pistachios or walnuts for the hazelnuts.

Nutrition and Physical Therapy

Diet and nutrition are key components of many conditions managed by physical therapists. What's more, nutrition can directly affect recovery and function while an individual is under a physical therapist's care. It makes sense, then, for physical therapists to be concerned with and address nutritional intake and eating patterns of their patients and clients. Nutrition is part of the professional scope of practice for physical therapists.

APTA's position is that it is "the role of the physical therapist to screen for and provide information on diet and nutritional issues to patients, clients, and the community within the scope of physical therapist practice." (House of Delegates P06-15-22-17)

However, because each state has its own jurisdictional scope of physical therapy practice, PTs should check their state practice act, which may be silent on nutrition. If that is the case, PTs need to turn to state laws governing nutritional practice, which like physical therapy practice acts are adopted by each state. Some states do not allow any person to give nutrition advice other than a registered dietitian. Others allow any person to give nutrition advice but only allow registered dietitian nutritionists (RDNs) to charge or bill insurance. PTs should check their state's laws on nutrition for confirmation.

In addition, each PT should consider his or her personal scope of practice before engaging in nutrition and diet services.

Is nutritional education a reimbursable physical therapist procedure?If the information a physical therapist provides is substantial in content and time, falls within the patient's plan of care, and is documented, it is possible that nutrition education reasonably could be charged as patient education (for example, self-care). However, check their state's laws on nutrition and contact your third party-payers to confirm.

May a physical therapist advertise nutrition services or use the designation "nutritionist"?Unless you or someone on staff is licensed or holds a certificate in diet and nutrition, and is covered by professional liability insurance, it would not be advisable to advertise services that you may not be eligible to deliver.

The Center for Nutrition Advocacy provides links to state laws and other information regarding the use of nutrition tools in clinical practice. Here are 5 scenarios in which health care professionals legally can use nutrition tools in practice:

May a physical therapist test for nutritional deficiencies or basic blood values for nutrients?Only in states and territories where physical therapists have legal jurisdiction to order labs would it be permissible to order tests for blood values.

May a physical therapist provide nutritional consultation?If a physical therapist is certified or licensed in nutrition and dietetics, then nutrition consultation may be within the clinician's personal scope of practice. For jurisdictional scope of practice, PTs should check physical therapy and nutrition state laws and licensing boards for any nutrition consulting parameters.

When should a physical therapist refer to a specialist for nutritional education?Per the APTA House position, the role of the physical therapist in diet and nutrition "includes appropriate referrals to nutrition and dietary medical professionals when the required advice and education lie outside the education level of the physical therapist."

For instance, a PT should refer out when the required education is beyond general information that can be found in the public domain, or involves information that is outside of dietary guidelines (see Related Resources below) or related guidelines by such entities as the Academy of Nutrition and Dietetics, American Institute for Cancer Research, and the American Hospital Association. Clients who require extensive meal planning, specific values for any macro- or micronutrients should be referred out, as should patients with specific disease processes or who are on specific medications that are directly affected by dietary manipulations.

Various professionals provide nutrition consultation as part of their practice. These include physicians, nurses, dietitians, and nutritionists, and their roles and scope vary based on geographic location, practice setting, and state laws and regulations. APTA recommends networking with a local nutritionist or dietitian in your area who may be familiar with your patient population. See Referral Resources below for links to referral sources.

To get to Zero Hunger, food is not enough. Providing food assistance in an emergency can save lives, but the right nutrition at the right time can also help change lives and break the cycle of poverty.

This is why, as the leading organization providing food assistance to the worlds most vulnerable, the World Food Programme (WFP) prioritizes nutrition as a core element of its work.

Despite significant progress over recent decades, poor nutrition remains a colossal and universal problem, with one in three people on the planet affected by some form of malnutrition. Undernutrition inadequate energy or nutrients continues to affect more than 150 million children worldwide, while rates of overweight and obesity are also rising in all countries. Conflict and natural disasters are exacerbating the problem.

Malnutrition at its extremes can be a matter of life and death, and in the long term can hold back people and countries, undermining economies and development.

Our work

Where malnutrition threatens the worlds most vulnerable people, WFP is at the forefront to prevent it, and treat it when it does occur.

While addressing undernutrition in emergencies has long been our raison detre, our focus over the past few years has broadened to encompass all forms of malnutrition including vitamin and mineral deficiencies also known as hidden hunger and overweight and obesity, alongside undernutrition. Weve done so in recognition of the fact that, while seemingly unrelated, these problem stem from the same root causes: poverty, inequality and poor diets.

Our approach is integrated, with programmes designed to treat and prevent the direct causes of malnutrition, like inadequate diets, complementing programmes that address the underlying factors, such as poor knowledge of feeding practices or lack of clean water. We concentrate our efforts on the most vulnerable, targeting young children, pregnant women, breastfeeding mothers and people living with HIV.

We work to improve the availability of and access to nutritious foods, and analyze and address the barriers that people face in consuming healthy diets, such as through our Fill the Nutrient Gap situation analysis tool. We help build the capacity of countries to find long-term solutions, and contribute to the broader policy dialogue on food and nutrition security.

With todays complex and unprecedented challenges, no one organization can end malnutrition alone. WFP is committed to playing an integral role in inter-organizational initiatives and platforms such as the Committee on World Food Security, the Scaling Up Nutrition (SUN) movement, and the UN Decade of Action on Nutrition, and in government-led partnerships with UN agencies, NGOs, civil society, businesses and academia, as well as local farmers, producers, retailers and communities. Fresh grounds for coffee: Study shows it may boost longevity

CHICAGO Go ahead and have that cup of coffee, maybe even several more. New research shows it may boost chances for a longer life, even for those who down at least eight cups daily.

In a study of nearly half-a-million British adults, coffee drinkers had a slightly lower risk of death over 10 years than abstainers.

The apparent longevity boost was seen with instant, ground and decaffeinated, results that echo U.S. research. It's the first large study to suggest a benefit even in people with genetic glitches affecting how their bodies use caffeine.

Overall, coffee drinkers were about 10 percent to 15 percent less likely to die than abstainers during a decade of follow-up. Differences by amount of coffee consumed and genetic variations were minimal.

The results don't prove your coffee pot is a fountain of youth nor are they a reason for abstainers to start drinking coffee, said Alice Lichtenstein, a Tufts University nutrition expert who was not involved in the research. But she said the results reinforce previous research and add additional reassurance for coffee drinkers.

"It's hard to believe that something we enjoy so much could be good for us. Or at least not be bad," Lichtenstein said.

The study was published Monday in the journal JAMA Internal Medicine.

It's not clear exactly how drinking coffee might affect longevity. Lead author Erikka Loftfield, a researcher at the U.S. National Cancer Institute, said coffee contains more than 1,000 chemical compounds including antioxidants, which help protect cells from damage.

Other studies have suggested that substances in coffee may reduce inflammation and improve how the body uses insulin, which can reduce chances for developing diabetes. Loftfield said efforts to explain the potential longevity benefit are continuing.

Adam Taylor, fetching two iced coffees for friends Monday in downtown Chicago, said the study results make sense.

"Coffee makes you happy, it gives you something to look forward to in the morning," said Taylor, a sound engineer from Las Vegas.

"I try to have just one cup daily," Taylor said. "Otherwise I get a little hyper."

For the study, researchers invited 9 million British adults to take part; 498,134 women and men aged 40 to 69 agreed. The low participation rate means those involved may have been healthier than the general U.K. population, the researchers said.

Participants filled out questionnaires about daily coffee consumption, exercise and other habits, and received physical exams including blood tests. Most were coffee drinkers; 154,000 or almost one-third drank two to three cups daily and 10,000 drank at least eight cups daily.

During the next decade, 14,225 participants died, mostly of cancer or heart disease.

Caffeine can cause short-term increases in blood pressure, and some smaller studies have suggested that it might be linked with high blood pressure, especially in people with a genetic variation that causes them to metabolize caffeine slowly.

But coffee drinkers in the U.K. study didn't have higher risks than nondrinkers of dying from heart disease and other blood pressure-related causes. And when all causes of death were combined, even slow caffeine metabolizers had a longevity boost.

As in previous studies, coffee drinkers were more likely than abstainers to drink alcohol and smoke, but the researchers took those factors into account, and coffee drinking seemed to cancel them out.

The research didn't include whether participants drank coffee black or with cream and sugar. But Lichtenstein said loading coffee with extra fat and calories isn't healthy.
